Irish soda bread / vegan mofo 2009

It's always nice to have a little home-baked something to go along with soup. It makes the meal seem homier and more comforting. When I saw this quick bread on the Holy Cow blog, it looked like just the thing to whip up for our meal. I've always enjoyed the dense texture of Irish soda bread, and although the original recipe appeared to be lighter than the normal soda bread, I made a couple of changes that probably affected the texture. Vaishali used half whole wheat flour and I used all white whole wheat flour. She added cream of tarter, and I used her suggested substitute because I didn't have any. And I added raisins, just because I felt like it. You might want to try her original version - it looks really good!

They visited Casablanca and met an astounding local man who is revered by many for his work among the poor. What is most impressive is how much support he has given to young women to get educated and succeed. Now that's not something you expect out of an Islamic culture. As it stands now, the most recent stats have just been released, regardless of religion, that 30% of women worldwide are abused. That's billions of people suffering. The figures are much higher in Islamic countries. To see a man devote so much of his life and resources to helping young women develop warms the heart.

3 Videos: Free Health Clinics Serving Middle Class America Now, Republicans Party of No Answers
Free clinics were once the last resort of the poorest of the poor in America. Today, people call their local fire department and 911 calls for free help as much as overwhelming the emergency rooms of hospitals. Now the new trend is free clinics. Has America become a third world nation? We are a nation in distress and Big Business and the Repubican Party doesn't give a damn.
Americans are dropping their health insurance premiums in droves. No one can afford the $15,000 a year premiums just to own basic coverage. That doesn't even address catastrophic coverage if they were to experience a cancer diagnosis.
Nor does the health insurance industry any longer guarantee, even if rated up to higher premiums, that a person can get coverage because of pre-existing conditions, some as easy to treat as Type 2 Diabetes.
Doctors and nurses are already overworked across America from a stressed out medical system. Yet, here they are, a number of hardy loving souls, volunteering their "free" time to help offer health care to folks who can no longer afford health care premiums. Those $100,000 a year jobs are now only paying $30,000. With a 70% cut in pay across America (because of Big Business still continuing to outsource our jobs as no one has stopped the so-called "work visa" program), no one can any longer afford what they used to pay, yet the insurance industry keeps rocking along gouging the American consumer.

Your Fair Share
There are a surprisingly large number of people in America who sincerely believe that they are not getting and so want their 'fair share' which leads to the question: what is your fair share? What is it exactly that you are owed? And who owes it to you?
The first thing that we need to do before we can determine what your particular fair share is would be to define exactly what it is we are talking about. What is it that you are missing out on that others are getting and that you deserve?
Tops on most people's list would be, of course, money. Are you getting your fair share of money? And if you don't think so, then why are you not getting your fair share? Who are you comparing yourself against? What do they do for a living? What do you do? Why do you deserve as much or more?
One area where you hear many folks complain about what others are earning is athletics, or entertainment. Why should a ball player or a singer or an actor make millions while you struggle every day at your difficult job and make five figures?
Well, first of all, how much do you generate in income with your production at your job, and how easy would it be to replace you right now, or in a short time? Could you get up on a movie set and act as well as Denzel Washington or Meryl Streep, get up on a stage and sing as well as Mariah Carey, step up to the plate and hit as well as Derek Jeter?
So the answer is a resounding "no", and you are willing to admit that. But you still sweat and toil, and wonder why they get paid so much more. Well, for one, tens of millions of people all over the country and from around the world are willing to pay their own hard-earned money to watch or listen to these performers. Is anyone willing to pay anything to watch you work?
Because of these individuals God-given abilities they have separated themselves from the rest of us with skills that many of us are willing to enjoy watching them perform. These talents and abilities generate vast sums of income for their studios, teams, and production companies, and a portion of this goes to the performers.
The easy solution would be to not go to any games, buy any music, view any movies, etc. However, the majority of your fellow citizens will not join you in this reclusive lifestyle, and so your protest will effectively be wasted and worthless, except to you, of course.
The exact same income-generation scenario plays out in other forms of salaried positions, from executive boards to law offices to surgery rooms people make money because they have specific talents, or have become educated in and mastered specific skills and professions.
Police officers in the career that I have chosen make more money than clerks in the banking industry that I left behind. The police work outside in all types of weather conditions, have to physically confront dangerous individuals, wear at least one weapon everywhere they go and may need to use it at any time. These and many other skills and job hazards lead to the discrepancy.
In today's America, and for decades now, the old arguments about equal opportunity no longer exist. There will be race-baiters, women's liberation holdovers, and other excuse makers who will try to play on the liberal conscience and make you believe differently, but the fact is that in the vast majority of circumstances in this country, anyone who wants to can succeed.
Recipes for success vary wildly, from taking advantage of some natural talent or ability, to concerted efforts at higher education, to plain-old hard work. If you don't have a natural talent, you can outwork that perceived disadvantage by staying in school and studying, taking low level jobs and working your way up, and so on.
Now some people put roadblocks in front of any success by their own actions involving personal behavior, substance abuse, criminality, and many other activities which cause them to miss opportunities, or have those delayed. This is nothing more or less than their own decision-making process effecting these opportunities.
If you don't want to work hard, or study hard, or conform to regulations, procedures, rules, and norms set up by society or professions, then that is your choice. But then don't blame anyone else for your lack of success either.
Some people complain that they have made all the right choices: never made poor personal choices, stayed in school and studied hard, and went out to work and worked hard, and yet still the big opportunities never came along. To the young who fit into this category all I can say is that competition is rough, and you may need to evaluate specialty education or skills. Keep plugging away, keep looking for opportunities, be willing to stretch yourself, stay on the right path.
To older individuals, you can take the same advice and make it work, but you need to realize that the older you get, there will be some opportunities that begin to close on you. This is a simple fact of life, and if you don't plan on making yourself valuable and diverse while you are young, you may never be able to make that up as you get older. You simply need to try as hard as you can while remaining realistic.
This is not to say that there are no people who need and deserve help. There are some who, because of physical or mental disabilities not of their own making, or because of unusual extraneous circumstances absolutely deserve assistive services in providing at least a certain level of opportunity. This is simple compassion. But no one deserves a check for sitting home and doing nothing when they could be out working and have the opportunity to do so.
This is also not to say that there are not employers who have historically taken advantage of workers by not paying them a 'fair' wage. This happens when business owners in particular fields or businesses 'collude' to construct a salary structure that does not allow for competition. In such cases, limited intervention may be necessary such as salary arbitration, minimum wage laws, etc. But a fine line needs to be walked between protecting salaried workers and profit-seeking businesses so that neither ends up suffering.
The bottom line here is that the only 'fair share' that any of us is entitled to is that which we actually earn by our actions. The person who goes out to work at a low-skill job deserves more salary than the healthy person who sits home on the couch. The person who gets educated and gains experience in a field deserves more than the low-skilled worker. The naturally gifted talent that others are willing to pay see perform deserves more than this educated and experienced person.
You deserve a 'fair share' dictated by your own efforts, your talents, and your ability to generate income for others. There is no legitimate system in the world that works any other way. All systems of Communism and Socialism that attempt to take hard-earned money from true workers and disperse it among everyone eventually have collapsed or deteriorated into systems of pure political patronage.
In the end, the only 'fair share' that we deserve is in opportunity. If we waste away our time and our opportunities while others are working hard to make their dreams a reality, then those others deserve more than we do. Many Americans have simply become their own worst enemy, and the only path to success for them will never come from some political 'change', but only through personal change.

Revelation Perseverance
NOTE: This is the continuation of the 'Sunday Sermon' series, all entries of which can be viewed by clicking that 'label' below.
The Book of Revelation is the final book of the Bible. Also known to some as 'The Apocalypse' or the 'Revelation to John', the book is filled with symbolism as it unravels the end of times for man's journey here on the planet Earth which began in the Garden of Eden.
The symbolism of the book can likely be attributed to two parts. The first part is one that I believe to be mystical revelation in which God reveals future events to John of a spiritual or heavenly nature with symbols that he can understand and which are left to our interpretation for their exact meaning and nature.
The second part is one that I believe comes from John's attempts to describe future people, places, media, weaponry, technology and events in ways that are understandable to him based on the world of his time. For instance, John describes in Revelation 9:19 what I believe to be tanks as horses. When you read the passage and a few just prior, it is easy to follow this logic.
The Book of Revelation is about two main principles. As the New American Bible describes it "the triumph of God in the world of men and women remains a mystery, to be accepted in faith and longed for in hope." This means that we need to accept with faith that God has a plan for humanity, and that the culmination of his plan for humanity is nothing to be feared, but rather to be longed for.
Many through the ages have wanted to believe that this finale for humanity was upon them and their world. They have seen the end of days, that 'apocalypse' or prophesied time of the imminent destruction of the world and salvation of the righteous, coming in their own lifetimes. Every one of these previous believers was wrong, or was rushing God's hand.
God has laid out certain key events in the text of the Bible that must occur before the events depicted in Revelation will come to pass. Among these were the spreading of the Gospel of the Truth of Jesus Christ to all corners of the world. This has only become realized in recent decades, with the final reaching of missionaries, evangelists and, frankly, the internet into the remotest sections of the planet.
Another key event that the Bible lays out as necessary before the end times fully arrive is the rebuilding of the Jewish temple on the Temple Mount in Jerusalem. This was impossible until recent decades, with the return of the Jews to power in the region, the establishment of Israel as a nation, and their subsequent control over Jerusalem itself as a result of a series of wars. Those wars will probably look like small potatoes next to what will result if they actually attempt to build that Temple.
The organization of the European Union is another clear sign that we are moving towards those end days of Revelation. Add in the circumstances of Israel in relation to its neighbors, the budding relationship between Russia and Iran, and the strengthening of China, and any serious evaluator of a Biblical end times theory has to admit that the earthly powers and circumstances are finally aligning as fully as never before in human history to those expressed as necessary by Revelation and other Biblical revelatory books.
Now there will be some who will scoff at any 'end of the world' scenario. There are many non-believers in the world today. Not just non-Christians, but people who refuse to believe in anything beyond their own worldly thoughts and desires. For these people we can do nothing but pray, and hope that as the final years play out they see the light before it is too late.
The fact is that the Bible says there will be many who see these Revelation events unfold before their very eyes, and yet continue to disbelieve. Some will do so out of a hard heart. These are the stubborn people who simply refuse to admit they were wrong, and refuse to surrender their will to that of God. Others will be seduced and misled by the forces of evil that will emerge during these end times, most especially by the anti-Christ, the world leader who will emerge.
Keep in mind the rebuilding of the Temple in Jerusalem by the Jews there. If you see that happen, you can begin the countdown. If you don't see that happen, then anything else is pure fear-mongering. But if that does happen, if you are not a believer by that point you had better start paying attention to Revelation, and in fact to the entirety of Christ's teachings and those of his Apostles in the New Testament.
The end times, whenever they occur, will not be a happy period for Christian believers here on earth. There will be wars, famine, persecution, pestilence, natural disasters, and many other heart-stopping occurrences. The anti-Christ will mislead many into thinking that these are coincidental and that he has the answers. Those of us who know the truth need not fear that time and those events, we only need do two things: remain faithful, and persevere. Remember, we know how it will all turn out in the end.
Until such time, if it even happens in our lifetimes, I would urge you to open up your Bible and read. Try to take the time to read it from front to back. If nothing else, at least start out by reading through the New Testament, from the teachings of Christ to the 'Acts of the Apostles' and on to Revelation. Give yourself a fighting chance by experiencing the ammunition of revealed Truth. And may God bless you and yours as you continue your life's journey.

It's a mean-spirited culture toward women like this in Afghanistan that really makes Americans question why we are fighting for their freedom. Afghanistan is a country where NGOs tell us the statistics are that 90% of the women here suffer abuse, rape or murder. It's time for America to leave Afghanistan; this war isn't worth fighting to protect this kind of perverse culture. Fortunately, for these ladies they found a shelter that gives them both safety for now and hope for their future.
Love Soup by Anna Thomas
When I became a vegetarian, one of the first cookbooks I bought — maybe the first — was "The Vegetarian Epicure" by Anna Thomas. It was filled with recipes that not only I, but my omnivore friends, found delicious. It was a book that made vegetarian cooking seem almost mainstream and gourmet at a time when vegetarians were still seen as a little odd. Anna Thomas was a graduate student in film production at UCLA in 1973 when she wrote that classic book. She went on to write "The Vegetarian Epicure Book II" in 1978 and "The New Vegetarian Epicure" in 1992. In addition to writing cookbooks, Anna Thomas is a screen writer and producer. She won an Academy Award for best writing/screen play written directly for the screen for El Norte, and additional kudos for My Family/Mi Familia which she co-wrote and produced. She was also a screen writer on Frida as well as other films.
Ms. Thomas has just released a new cookbook, "Love Soup," devoted to wonderful-sounding soup recipes, and I was delighted to be offered the opportunity to review her latest effort. Although the book is described as vegetarian rather than vegan, it's "vegan friendly" in the friendliest of ways. Ms. Thomas' two sons are vegan, and she knows her way around a vegan recipe. In nearly every chapter (desserts might be an exception) the vegan recipes outnumber the vegetarian ones, and most of the non-vegan ones could easily be made vegan with the simple substitution of Earth Balance or olive oil for a bit of butter, by using a vegan garnish instead of a non-vegan one, or by substituting vegan sour cream or cheese in the few recipes using those ingredients.

The Book begins with lots of useful information about stocking the pantry, choosing ingredients and equipment, and measurements. It continues with a chapter on homemade broths, offering seven recipes for soup stock, all vegan, for those who like to make their own. The main soup chapters are arranged by season, to facilitate shopping at farmers' markets or using produce from your garden. There are also chapters for breads, enticing condiments and spreads to round out your meal.
I was planning to try a fall soup, but was too attracted to certain winter and summer recipes to do that. The summer soup I chose features zucchini, Yukon Gold potatoes, and fresh basil - all of which are in abundance at our farmers' market now. The second recipe, spicy Indonesian yam and peanut soup, sounded so delicious I just couldn't wait until winter. The next soup I plan to make is also a summer recipe, roasted eggplant and garbanzo bean soup. Doesn't that sound tempting?

I decided to make zucchini and potato soup first, and I chose to make the puréed version because I was in the mood for a creamy soup. The author warns not to over-blend because potatoes have a tendency to become gummy when over-worked, and I under-blended at first. I didn't achieve the creaminess I was after, so I re-blended to creamy perfection. The taste was rich and delicious, and the texture lush and smooth. The soup was truly sumptuous - can't wait to make it again! I served it with an Irish soda bread. The soup took me one hour to make, start to finish.

My next test-recipe was spicy Indonesian yam and peanut soup. Would you believe this soup contains an entire half cup of shredded ginger? Well, it does. It's a root vegetable soup with yams, carrots, parsnips, onions, garlic, peanut butter, tamarind, lemon, and fragrant herbs and spices.

It was a little more complicated and time-consuming than the zucchini soup, but it was worth the effort. (And it wasn't hard to make.) I asked my husband what word he would use to describe the taste, and he said, "exquisite" - this is from a person who doesn't usually get beyond "very good" when describing something. The flavor was rich and complex, and I'd love to make this soup for company. In fact, there was SO MUCH soup that I was wishing we'd invited a few people for dinner. It was filling, too, and along with a salad, made a fabulous meal.
I'm looking forward to trying lots more of the soups from "Love Soup," if I can stop myself from making these two over and over! If you enjoy making soups filled with seasonal vegetables, beans, fresh herbs and condiments, you should take a look at "Love Soup."

The real truth is that America is fighting a two-front war in the Middle East, drug wars in Mexico, South America and America's inner cities and small towns all across America. We can't even afford real health care for our citizens.
We are going bankrupt on the Republican wars. Who has any money left for a new project for staging missiles in Eastern Europe? In the end, just how much of an arsenal does one country need? We have more than adequate resources to protect our country and plenty of new technology - and will power - to deal with fools like the Iranian regime should it become necessary.

3 Videos: Americas Floods, Atlanta Badly Flooded, Damage at $250 million
That's why a lot of those flooded buildings were not insured as they could not get insurance or the cost was prohibitive. At the time I lived there the flood plain of the Atlanta area had not flooded in 100 years. The builders and business people were confident it would never happen. Mother Nature had other plans.

Today, as I write this post it has been raining all day. The weather systems in this part of America starts the rain in Houston, comes east to southern Louisiana and then moves on east on to Atlanta, Georgia. Lately I've been enjoying making things from other people's blogs and cookbooks. It's satisfying and creative when I devise my own recipes, but with so many intriguing recipes already perfected by others, and begging to be tried, it makes sense to benefit from my fellow-bloggers' hard work. We had a family dinner (minus two) Sunday night and everything we served came from food blogs and cookbooks.

I made a batch of Cheezy Quackers from Have Cake Will Travel to have on hand when our hungry guests arrived. I especially had in mind the mini-guest, aged 19 months, who really likes to eat, and appreciates a good cracker or two. I was right about this - she had a cracker in each little fist both before and after dinner, and even carried a couple home with her. Because I was thinking about Miss E, I reduced the pepper in the recipe by about half. Although the crackers were delicious, they were a bit salty for me so next time I think I'll reduce the salt a little, too. I used white whole wheat flour with a very small amount of baking powder and they turned out great. My favorites were the ones I thought I had rolled too thin! I didn't have a tiny duck cutter - just a pig and a flower - but I opted to use a pastry cutter, and cut the dough into rectangles because I'm lazy, and it's the easy way out of a lot of cutting. But I made pigs and flowers out of the scraps left over from straightening the dough. I may be lazy, but I like a certain amount of variety. :)

For the main course my husband prepared Sweet Chili Lime Tofu With Wok Steamed Collards, and Quinoa from Vegan Yum Yum. This has become one of our favorite dishes. We used a combination of collards and kale for the vegetable, and a combination of red and regular quinoa for the grain. I've already blogged about this dish in the past so I didn't photograph it. Here's a photo from the old post, just so you can see how attractive it is:
I also made a simple salad of sliced, fresh tomatoes, cucumbers and green onions drizzled with olive oil and balsamic vinegar.

For dessert I made two selections from Ricki's cookbook, "Sweet Freedom." I'd been eyeing the butterscotch blondies forever, and finally got all the ingredients together to make a batch. She warned me in the recipe not to over-bake them, and I tried really hard not to, but without a working timer in the kitchen, and so much going on, I probably did over-bake them a little bit. (Sorry, Ricki, I'm not used to the oven in this house, yet.) But, they were still fantastic! Everyone loved them, and now I have a really good excuse to make them again.

The blondies probably would have been enough, but I had two over-ripe bananas on the counter, and there was a recipe in "Sweet Freedom" for Banana Oat Bars that called for two very ripe bananas, so I made those, too. I subbed chopped prunes for the raisins or cranberries, and ground almonds for the coconut. I wanted to use coconut but we didn't have any, but they turned out great anyway. Guess I'll have to make these again, too, so I can try them with coconut and cranberries. (I also topped them with chocolate chips because I have a weakness for bananas and chocolate.)

The next day, I used the leftover quinoa and greens (the tofu was all gone, tsk) as the base for a lunch salad. I added tomato, cucumber and avocado, with olive oil and lemon for the dressing.
Now go make all this stuff! You won't be sorry.

It gets better. He's snubbed a public meeting with our President Obama on our own soil. Is this guy just a British version of former President George Bush: he just doesn't get it? He thinks a two hour visit is developing a real relationship with people? His lips are moving but he is just not a convincing actor.
I still would like to know what that "special relationship" is all about that he is claiming to have with America. He acts like the white guy with a black mistress from the 1930's American South who is afraid to go public for fear of getting lynched by his own neighbors. Is it the same with Gordon Brown about Obama?
If he is that cowardly, then he can quit with the backroom visits. His answers to serious issues and questions were like a weasel slinking around until he could find an exit. Interviewer Brian Williams was too nice to his stock answers. Where is a junkyard dog journalist when you need one?

@Moderator: Future Twits is proud to bring you the first ever online debate about national health care reform! We would like to thank our honored guests, all of whom took time out of their busy schedules to be present at this event.
@Moderator: Lets get started. Gentlemen, we have a crisis facing our nation. There are an estimated 60 million people living in the United States of America who currently have either no health insurance or inadequate health insurance. What can we as a nation do to help these people and end this crisis?
@BigBillO: I don't see that there is a “crisis” like everyone is claiming. I have health insurance, my friends have health insurance, everyone I associate with has health insurance – where is the problem here? Why can't these people just move to Canada, Mexico, or Russia or something.
@Moderator: Those countries because of . . . their health programs?
@BigBillO: No, mainly so that I'll have more spots to park my Bently when I go to the mall.
@Moderator: Bill, a bastion of compassion, as always. But, seriously, Bill # 2, you must have some ideas as well about how to fix this broken system.
@GodlessWonder: My answer is simple – just outlaw religion. Everything that is wrong with this world can be traced to religion. The energy crisis – religion. The AIDS epidemic – religion. World hunger – religion. The asteroid coming to hit our planet in 20 years – religion. My last boy friend breaking up with me – religion. It's all religion . . . religion . . . religion . . . religion . . .

@WideLoad: I think that we need to take America back to a much more simple time, away from the liberal agenda. The only people getting health care now are the terrorists and the welfare Octomoms. We need to take America back to the simpler times before greedy liberals taxed the poor, struggling drug companies to the edge of bankruptcy and forced them to stop making their delicious Vicodin, Lortab, Percocet, Demerol . . .
